This year is quickly going by and Easter is approaching earlier than usual, on March 28th. When I think of Easter – the first dish that comes to mind are deviled eggs. They are my go-to dish for the holiday and I always volunteer to make them, because not only are they easy to make, but you can have such a variety of filling for them. Bacon Jalapeno Deviled Eggs

Ingredients

  • 12 large eggs (hard boiled and peeled)
  • 1 cup mayo
  • 1 ½ tsp rice vinegar
  • ¾ tsp ground mustard
  • ½ tsp sugar
  • 2 jalapenos (seeded and chopped finely)
  • 6 pieces of bacon (cooked, crisped, and crumbled)
  • Paprika (for garnish)

Instructions

  • Slice the hard boiled eggs in half, lengthwise
  • Remove the yolks and put them into a separate bowl
  • Mash yolks with a fork
  • Add in mayo, vinegar, mustard, and sugar and mix until well combined
  • Mix in bacon and jalapenos (save some bacon to sprinkle on top of eggs)
  • Put the mixture into a bag and cut a small hole in the corner
  • Fill eggs with mixture
  • Sprinkle with paprika and bacon
  • Chill until ready to serve

Deviled Avacado Eggs

Ingredients

  • 12 large eggs (hard boiled and peeled)
  • 3 large avocado’s
  • 4 tsp lime juice
  • 2 tsp cilantro
  • Pinch of garlic powder, salt and pepper
  • Sprinkle with paprika

Instructions

  • Slice the hard boiled eggs in half, lengthwise
  • Remove the yolks and put them into a separate bowl
  • Mash yolks with a fork
  • Add in avocado, lime juice, cilantro, and spices and mix until well combined
  • Put the mixture into a bag and cut a small hole in the corner
  • Fill eggs with mixture
  • Sprinkle with paprika
  • Chill until ready to serve

Colorful Deviled Eggs

Ingredients

  • 12 large eggs (hard boiled and peeled)
  • 1 cup mayo
  • Food coloring
  • ¾ tsp mustard

Instructions

  • Slice the hard boiled eggs in half, lengthwise
  • Dye the eggs until they’re a pretty pastel color (make the colors as you would Easter egg dye, I use about 3 drops of food coloring each) and drain them on a paper towel
  • Remove the yolks and put them into a separate bowl
  • Mash yolks with a fork
  • Add in mayo and mix until well combined
  • Put the mixture into a bag and cut a small hole in the corner
  • Fill eggs with mixture
  • Sprinkle with paprika
  • Chill until ready to serve
