Tis the season for everything Pumpkin and chilly Sunday mornings with family. There is nothing better than making a sweet filling breakfast before starting your day. This breakfast is one of my favorites and I am going to share it with you!

Pumpkin Bread French Toast

I normally make the bread the night before I plan to make this French toast.

Pumpkin Bread Recipe

  • 1 cup pumpkin puree
  • 2 eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla
  • 1 cup sugar
  • 1 cup all purpose flour
  • ½ tsp salt
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinn
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • 1/8 tsp grond cloves
  1. Preheat oven to 350
  2. Butter or line a standard loaf pan
  3. Combine wet ingredients (pumpkin, egg, oil & vanilla)
  4. Combine dry ingredients
  5. Pour into loaf pan and bake for 45 minutes.
  6. Allow to cool over night

To make French Toast:

  • 3 eggs
  • 6 tbls milk
  • ½ tsp cinn
  • ½ tsp vanilla
  • Butter
  • Syrup
  1. Beat the eggs, milk, cinnamon, vanilla, and salt together thoroughly in a baking dish
  2. Heat a large skillet over medium - medium high heat with some butter (enough to coat the bottom of the pan liberally)
  3. When your pan is hot, dip a few slices of pumpkin bread into the egg batter, turn over so that each side is coated, lift the slices (carefully!) to let any excess drip off, and place in the pan
  4. Let the french toast sear on both sides until you get a deep brown/golden brown crust
  5. Add more butter to your pan, dip and cook the next few slices, and repeat until all 6 are done
  6. Top with a pat of butter and some syrup
